Live the Land and Produce Olive Oil

Experience the heart of Italian tradition by joining a hands-on olive harvesting day, typically held between mid-October and late November. You will work side-by-side with local farmers in sun-drenched groves, learning the ancient art of "brucatura" by gently shaking the silver-leafed branches to gather the olives into nets spread across the red earth.

After the harvest, follow the crop to a local traditional oil mill (frantoio) to witness the magical transformation of the fruit into "liquid gold." You will see the entire cold-press process firsthand, from the initial cleaning and crushing of the olives to the extraction of fresh, vibrant green extra virgin olive oil.

The day concludes with a guided olive oil tasting, where you’ll learn to distinguish the spicy, peppery, and fruity notes of high-quality oil. Served on warm, crusty bread with a pinch of sea salt, this tasting offers a true sensory journey into the authentic flavors of the Mediterranean countryside.
